Cocoa Ice Cream


I tried making instant cocoa ice cream. It seemed like a good idea, but it turned out really weak and almost tasteless, hence the syrup. Do, lesson learned.

From Car Wrecks to Rainbows – a Week in One Post

Yeah, I’ve been busy, and lazy, so you get the whole week at once.
First, my bro hit a deer. He’s ok, but the car is not.



Though one good thing on Sunday, we ended up getting to enjoy the spaghetti dinner from the community building. It was a fund raiser for a family who had a fire. It was very tasty, including some strawberry cake that I kind of wish I had the recipe for.



Another thing we had this week was a lot of rain. So much so that the duckies at Dollar General went out for a swim.

I did get some ice cream made though. Chocolate mint, strawberry, blueberry, maple, and vanilla pineapple.

So far we’ve only had the maple. I just used the normal vanilla recipe and added a teaspoon of maple flavor and a half teaspoon of vanilla. Though I don’t like walnuts, I mixed some in Dad’s.

There was also a mystery bug…

Wednesday we went to our weekly Council Bluffs trip. I found the exact carveable foam pumpkins I’m looking for to make man eating plants – for $25 each!!! I did not buy them. I did, however, enjoy lunch at Great Wall. (Mine was the lemon chicken).



Also saw some neat buildings



And a lot of dust.

Today the exciting thing was the sky. It was supposed to be hot and sunny. Instead we had clouds…

Told Y’all I’d Buy The Dog


If you saw that and thought, “Isn’t that the skeleton dog at Dollar General?” You’d be right, except it’s no longer at Dollad General, it’s now in my house waiting for Halloween. Heh-heh. We all knew I was going to get it.
In other news, I finally tried the Asian stew recipe that has been haunting my cookbook for years and guess what? It was good!

It’s beef, carrots, onions, ginger, green onions, sesame oil, soy sauce and bok choy. Actually we had to use a kind of cabbage but anyway, it was tasty with some rice. Hang on, I’ll just add the recipe.

I even left it big so that it’s readable. You’re welcome. We used stew meat instead of the short ribs because that’s what I had, lol!
Desert was lemon lime sherbert Ala the Ninja Creami.

I just used the orange sherbet recipe, but instead of OJ did half lemon juice and half lime juice and some green food coloring. It was pretty tasty.
And that’s it.

Lemon Strawberry


Yes, that’s lemon strawberry ice cream as you can see, the strawberries float to the top and make the top half pink when you process it, but that’s ok because I think it’s pretty that way. Also, if you want it yellow, add food coloring.

Just pour everything into the pint, stir it up, and freeze. Super easy and delicious.

More Ice Cream

Did family stuff yesterday and got a new tire, so not a lot to blog. We did have ice cream, though.

That’s a container of the lite and fur Greek yogurt in strawberry cheesecake, mixed with sugar free chocolate pudding and two strawberries tossed in.

While those of us who don’t like the fake sweetener had chocolate raspberry. Just the ninja chocolate recipe with some frozen raspberries tossed in. Both were tasty but since the fake sweetners make me sick, this was my choice.
And that’s all I’ve got.

Strawberry ice cream


Or should I say strawberry ice cream with hot fudge? Anyway, it’s an easy one. I don’t use the ninja strawberry recipe, instead I use the vanilla ice cream and cur part of the milk and cream and replace it with strawberries and then add some food coloring.
Anything else worth mentioning? Saw this guy in Creston last night.

Pear Sorbet


1 can of pears in light syrup and milk to fill the pint. Freeze. Spin on the ninja creami. Yum!

Parsley, Sage, Rosemary, and Thyme…



Yesterday’s new recipe was for vegetables. Cut up zucchini, toss in some cherry tomatoes and some while mushrooms. Then cover in olive oil, parsley, sage, rosemary, thyme, garlic salt, and pepper. Bake at 350 for 35+ minutes to your desired browness. And yes, they were delicious.

My other foodie photo is chocolate mint ice cream. It’s the basic ninja creamie chocolate recipe but with peppermint extract (not mint, but peppermint. That’s important.) I added some chocolate shell sauce afterwards just to zest it up.

Cherry Ice Cream


A couple of months ago we got a ninja creami on clearance. Since then I’ve been having fun making ice cream. It’s a pretty handy thing – you mix up your pint, freeze it, then the next day you pop it in what is vaguely like a blender, and voila! Ice cream.
Anyway, this one is cherry:
- 1 TBS cream cheese softened
- 1/3 cup sugar
- 1/4 tsp cherry flavoring
- 1/2 cup heavy whipping cream
- 1 cup whole milk
- 5 or 6 cherries cut in half and pitted
Microwave cream cheese 10 seconds to soften, then mix in sugar and cherry flavor. You can add a little vanilla if you want, too, for a more cherry vanilla flavor.
Add whipping cream 1/4 at a time and fully incorporate each before adding the next.
Add cherries, then milk. If you have room in the pint, you can add more of whichever you prefer to fill it to the max line.
Freeze, then process in your creami.
And that’s what I have for today. Still have “the covid” so thats fun.
